2.4.5. Changes in color parameters
The color of the strawberry purée was determined using a CM-
3600d colorimeter (Konica Minolta, Japan), in glass cuvettes with an optical
path of 10 mm. The measurement was made on the CIEL*a*b* system,
using illuminant D
. Values of L*, a*, and b* parameters enabled
calculating the absolute difference of the samples' color after preservation
compared to the control sample, using the following equation:
