Filter paper press method (Peng, Xing-lian, & Guang-hong,
2009) was used to determine water holding capacity of the starch
gels prepared at different mixing speeds and times. Each gel was
placed between two filter papers and two Plexiglas plates and
pressed with a 100 g weight for 4 min at room temperature. Then
the weight gain (moisture gain) of filter papers was determined
gravimetrically using an analytical balance. Weight increase of the
filter papers divided by the initial weight of the gel (3 g) multiplied
by 100 is reported as fluid release, which has an inverse relationship
with water holding capacity.
