The study was expected to facilitate an in-depth understanding
of in-vessel composting technology, especially given that research
regarding this technology was limited in current literature. In addition,
this study considered and included the end users of the vegetables
(i.e., the restaurant and the student dining hall) into the
economic analysis, which was barely represented in the existing
literature. As a result, the expansion of the scope provided a holistic
analysis of composting technology. The knowledge gained
about the system in this study may promote the development of
composting technology, prove the feasibility of installation, and
thus motivate application of composters in large food waste producers
like universities and groceries stores.
