Phenotypic characterization
The promising LAB isolates were phenotyped as described in
Bergey’s manual of systematic bacteriology (Logan and De
Vos, 2009). The following tests were applied: cell morphology;
growth at 15, 37 and 45 C; and growth in MRS containing
2.5%, 4% and 6.5% NaCl. Fermentation patterns were determined
using API 50 CHL and API 20 kits (Biomerieux SA,
France) according to the manufacturer’s instructions.
