The TVB-N values of the control and coated samples increased significantly throughout the storage (P < 0.05). Control (41.27 mg/100 g), G (32.57 mg/100 g) and GþOL (41.08 mg/100 g) exceeded the acceptable limit value on days 6, 8 and 10 of the storage, respectively. During the storage period, the total volatile base content of all groups increased; however, this increase was slightly moderate in the shrimp treated with OLEO. The early increase in TVB-N content, when bacterial counts were rather low, indicated that autolytic processes were involved in the production of volatile bases (Finne, 1982).
