It was found in a study by Erkoc, Iakovou, and Spaulding (2005) that the supply of food and beverage (F&B) items in cruise ship is an essential part of service quality. The variety of offerings to passengers onboard in terms of choices and quality is also essential (Qu & Ping, 1999). One cannot offer such variety and freshness to thousands of consumers around the world without taking into consideration the importance of such a func- tion. Likewise to other industries, the cruise sector is recognizing the importance of supply chain management by appointing high- level managers in charge of it, i.e., Vice President SCM and Director of Logistics, etc.
