3.7.2. Taste/profile
Sweetness intensity scores, sweetness aftertaste and other taste
persistent after swallowing were evaluated for different concentrations
of the stevia amino acid sweeteners in aqueous solutions and
were compared with the sucrose aqueous solution. The results of
the corresponding sweetness intensity for stevioside and stevia
amino acid sweetener concentration are given in Table 2. The data
indicated that stevia amino acid sweetener (ST-GL and ST-AL) solutions
appeared to have a clean sweetness taste, and were not bitter.
