3. Results and discussion
3.1. Physicochemical parameters
The mean values of physicochemical parameters of four series of
pasteurized smoothies (four samplings per series) were:
pH ¼ 3.44 ± 0.04; titratable acidity ¼ 9.17 ± 0.46 (mg/mL malic
acid); soluble solids ¼ 13.7 ± 0.6 Brix; and aw ¼ 0.989 ± 0.02.
Variance homogeneity analysis (F-test) showed no significant differences
among them.
After all of the CCD runs, no significant differences were
observed between the pasteurized smoothies and the treated
samples (paired T-test).
