Maize is the most widely grain crop in the world. It has a wider range of uses than any other cereal. Maize flour and products prepared from it are desirable, mostly due to their taste and nutritional benefits. The health beneficial properties of phenolic compounds present in maize grains have been attributed to their high antioxidant activities, but also to many other mechanisms such as antimutagenesis and anticarcinogenesis. However, raw whole grain flour rapidly deteriorates upon milling, largely due to lipolytic enzymes.
