During storage of sparkling wines without yeast lees, oxidation
reactions involving phenols and aromatic compounds can occur, as
it happens in white wines. In order to prevent the oxidation, sulfur
dioxide (SO2) is traditionally used, not only for its antioxidant
property, but also for its antimicrobial action
