The mass of the carrier agent (inulin or gum arabic) in rela-tion to the mass of concentrated extract was calculated asw/w for the different ratios, i.e., 10, 20 or 30 g of carrier agent per 100 g of concentrated extract. The carrier agents were inpowder form and were dispersed directly into the concen-trated extract using a homogenizer (Ultra-Turrax T25; IKA,Germany) for 2 min at 20,000 rpm. Then, the prepared feed liq-uid was atomized with a spray dryer (model MSD 1.0, Labmaq,Brazil) at different temperatures (120◦C, 140◦C and 160◦C) bya peristaltic pump at a fixed rate of 0.60 m3/min and nozzlediameter 1.2 mm. The production yield was expressed as the ratio between the total solids content in the resulting powder and the total solids content in the feeding mixture. The for-mulation was mixed continuously by a magnetic stirrer duringthe entire process of spray drying.
