Fatty acids are necessary for normal physiological health, and vegetable oils have a high content of unsaturated fatty acids, which are heart-healthy. The nutritional value of PUFAs in the human diet is well recognized, and increased consumption of these fatty acids has been recommended (Department of Health, 1994). Diets that are high in monounsaturated fatty acids (MUFAs) and PUFAs are associated with reduced risk of cardiovascular disease and atherogenesis. Therefore, the evaluation of the lipid profile of fruit has become an important requirement.
