The term ROS refers to an array of metabolites derived from molecular oxygen. These cellular renegades damage DNA, proteins, and lipids, altering biochemical compounds and corroding cell membrane. Such molecular mayhem plays a major role in the development of various diseases such as cancer, atherosclerosis, and respiratory ailments. Antioxidant substances which scavenge free radicals play an important role in the prevention of free radical induced diseases. The most commonly used antioxidants at present time are butylated hydroxyanisole , propyl gallate (PG), butylated hydroxytoluene (BHT) and tert-butyl hydroquinone (TBHQ). However, these synthetic antioxidants have side effects such as liver damage and carcinogenesis. There is a need for isolation and characterization of natural antioxidant having less or minimal side effects,for nutrients or medicinal materials to replace synthetic antioxidants.
