Fructose concentration derived from sucrose stock solution as a function of nominal reaction time for various combinations of temperature and acid concentration. Three conditions resulting in very little recovered fructose are labeled on the graph as “others”. These three data sets are for temperature and acid concentrations of 200 °C, 1.0%; 180 °C, 2.0%; and 200 °C, 2.0%, respectively. The results are similar to fructose concentrations derived from fructose stock solutions exposed to the same conditions (data not published).
