Based on the results obtained after characterization (growth assays, antagonistic activity towards L. monocytogenes and Salmonella,tolerance to pancreatic fluid and BA production), 12 lactobacilli, coinciding with the same strains selected from the Bioscreen C growth assays, were considered candidates to be used as putative probiotic starter cultures in fermented sausages and their antibiotic resistance patterns, aggregation capacity and hydrolytic enzyme activity was then determined.
