Knowledge of water mobility and distribution in mushrooms is
of major interest in studying the postharvest senescence of this
economically important crop (Lagnika et al., 2013). Nuclear
magnetic resonance (NMR) spectroscopy is one technique to
characterize the state, mobility and distribution of water in fruits
and vegetable (Donker et al., 1997; Musse et al., 2010).
The objectives of this study were to evaluate the effect of
nanocomposite packaging on postharvest senescence of mushrooms
and to investigate the influence on free radical metabolism
and anti-oxidation system.
