The study indicated that the most homogeneous water distribution was obtained with injection of salts and phosphates, while the most homogeneous sodium distribution was seen in pickle salted fillets. However, relaxation time and proton diffusion MRI results indicated the highest degree of protein denaturation in the pickle salted fillets.
