Tocophe- rols, in turn, can act as free radical-scavengers, enhancing the oxi- dative stability of polyunsaturated fatty acids against peroxidation. At the same time, vitamin C, the main water-soluble natural anti- oxidant, also acts as a free radical-scavenger and plays an impor- tant role in regenerating tocopherols. Vitamins E and C are therefore nutritionally important and, given the fact that they are relatively labile molecules, the assessment of their stability after food treatments is of interest.
