In this work, dextrose crystallization experiments were performed to investigate how process variables (impurities, seed size, initial dextrose concentration) influence crystallization performance in terms of crystal yield and crystal size distribution (CSD). All crystallizations were equipped with two in-line probes to continuously monitor dextrose concentration and CSD. The objective of this paper is to show how the data obtained continuously from in-line monitoring throughout crystallization can be very usefully applied to interpreting the performance of the dextrose crystallization in terms of the final crystal yield and CSD. Off-line measurement of final dextrose concentration and CSD may not provide sufficient data to interpret the influence of changes in process variables. However, data from continuous monitoring throughout the period of crystallization provides additional data of what happened during the crystallization, which can be used to interpret how the final dextrose crystal yield and size were attained. Furthermore, these data can be applied in trying to control the crystallizer so as to produce a desired performance.
