To compensate for the antimicrobial effects of nitrite, cleanlabel
antimicrobials such as bacteriocins may represent an alternative
in nitrite-free cured meat products (Bastos et al., 2009). A
candidate bioprotective starter culture strain, S. sciuri I20-1, displaying
bacteriocin-like activity against S. aureus and both vegetative
cells and spores of C. botulinum was evaluated in this study
