The colour parameter b* (yellow) showed an increased
trend with the function of time, with greater intensity at
60 days of storage, which coincided with the highest TBARS
peak. Ferna´ndez-Lo´pez, Alvarez, and Catala´ (2000) reported
that oxidation and oxygenation increase the b* values. This
behaviour is in accordance with Garcı´a-Esteban et al. (2004),
who reported that the difference in b* values may be related
to the intensity of the oxidation process throughout the
storage period.
