Table 1 shows the physicochemical properties of the watermelon
juice used for spray drying. It can be seen that the watermelon
juice has a high pH value (5.79) which implied that it is
susceptible to microbial grow. Similar to other fruit juices,watermelon
juice contained sugars (glucose, fructose and sucrose)
that would contribute to powder stickiness during spray drying
[14]. The contents of lycopene and -carotene were served as
indicators for nutrient retention during the spray drying process.
