Fruit and vegetable consumption is increasingly being recommended as a part of a healthy lifestyle. Several studies have shown that a diet rich in fruits and vegetables is associated with a delay of the aging process and a decreased risk of developing inflammation and oxidative stress related to chronic diseases, such as cardiovascular diseases, atherosclerosis, cancer, diabetes, cataracts, cognitive function disorders, and neurological diseases, including Alzheimer’s. These benefits are almost always related to the presence of bioactive compounds, including carotenoids and phenolic compounds (e.g.,anthocyanins). Furthermore, the presence of fiber and vitamins C and E in fruits and vegetables also significantly contribute to these health benefits.
