The average moisture content of the solar-dried mangoes was 10.3% (w.b.) while the water activity was approximately 0.55 as determined with the sorption isotherm and verified with a water activity meter. Color and appearance were also well preserved in the solar-dried slices according to the scale described earlier. In general, little to no vascular discoloration was observed in the mango slices with an average rating of 0.4. In fact, no statistical differences were observed in regards to the visual ratings between the solar-dried and commercially-dried mango slices. Figure 7 shows a photograph of the solardried mango slices compared to commercially-dried slices. These results indicate effective preservation of solar-dried mango in terms of water activity and sensory quality as assessed in the aforementioned visual rating scale.
