Color was measured on the surface of rice kernels with a Min- iScan XE plus (HunterLab Associates Inc., Reston, Virginia, USA) using the L*, a* and b* (lightness/darkness, þredness/ greenness and þyellowness/ blueness) coordinates (CIELAB). The Hunter lab color meter was calibrated using black and white references. Color difference, DE, was calculated from L*, a*, and b* values using the HuntereScotfield’s equation (Hunter, 1975) as follows:
