Preparation of gelatin solutions
Gelatin aqueous solutions of different concentrations, i.e. 5, 8, 10
and 20% (w/v), were prepared by dissolving the biopolymer in
acetic acid 20% (v/v) at 40 C under magnetic agitation, and cooled
down to room temperature before processing. Gelation of the solutions
was not observed for any of the samples.
When EGCG was incorporated for its encapsulation, it was
added to the gelatin solutions at room temperature under magnetic
stirring, at a concentration of 10 wt.-% of the total solids content.
