The aim of this study is to evaluate the antimicrobial activity of
LAE against foodborne pathogens as alternative of EOs in active
food packaging. For this purpose, the antimicrobial activity, inac-tivation kinetics and growth kinetics were determined. Fur-thermore, morphological alteration in Escherichia coli due to
treatment with the antimicrobial substance has been studied by
