The maximum stress up to which G0 remains constant is called the critical stress (sc). The critical stress can be referred as the dynamic yield stress, which is the minimum stress required to cause the material flow. The obtained critical stress was found as 0.05 and 0.23 Pa for 5 and 10% (w/w) dispersions, respectively (Table 3). A wider LVE region and a larger sc were found for a higher lipid system, indicating the system stability to better resist the external stress.
