Volume, specific volume, density, weight loss and loaf height
The loaf volume (ml) was measured using the rapeseed displacement method. The seeds were poured into an empty container to measure its volume. The rapeseeds in the container were then measured in a graduated cylinder and marked as V1. Subsequently, a sample was placed into the same container and rapeseeds were poured in until the test bread was covered. The rapeseeds were again measured in a graduated cylinder and marked as V2. The volume (ml) of the sample was calculated as described in Eq. (1):
