The effects of reflecting films on accumulation of different pigments
in fruit peel have not been studied. Besides, the commercialized reflecting films
currently used vary in their capacity for light reflection. Their effects on pigment
accumulation might also be different. The key enzymes like UDPGalactose:
flavonoid-3-o-glucosyltransferase (UFGalT) that are involved in anthocyanin
synthesis in apples are light inducible (Ju et al., 1995; Ju, 1998; Ju et al., 1999).
Understanding any changes of enzyme activity in fruit peel that might occur may
help us understand the mechanism of color enhancement by reflecting films. This
experiment was designed to study the effects of different reflecting films on
pigment accumulation, enzyme activity, and fruit coloration under the cultural
conditions in China.
