A mice piece of well cooked steak will melt in the mouth.
You may be trying to overcooking meats that require brief heating or under-cooking that require long heating.
It is a common mistake by some people who do not identify the cut of meat to the way they want them cooked.
If cooked properly I like, if not I don't like either.
I also think they just need a little salt to taste, with a little sauce on the side if desired, than to over-season them or drown in marinades etc.
