2. Materials and methods
2.1. Sample preparation
Corn starch (Sigma Aldrich, MO, USA), containing 27% amylose
and 73% amylopectin, was suspended (5e40 mg/mL) in distilled
water with or without sodium chloride (0.3e0.6MNaCl) for 20 min
at 500 rpm. The suspensions were partial vacuum packaged
(250 mbar) in polyamide/polyethylene pouches (La Bovida, Nantes,
France) before the high-pressure treatment.
