Moreover, the initial counts of L. casei inoculated into high hydrostatic pressure- and heattreated litchi juice were more than the residual Bacillus strain, and further L.casei could rapidly grow in litchi juice, after 18 h of fermentation at 30 °C, reaching a maximum of 8.31 log CFU/mL in HHP-treated litchi juice and 8.57 log CFU/mL in heat-treated litchi juice.
