This is consistent with the description by Parker et al. [14] who described lumps of polymeric powders as dry sacks of encapsulated dry particles. The other types of flake-like lumps (Fig. 7) that formed in maltodextrin DE21 at 5 °C do not float near the surface. It is believed that these may be formed as a result of poor dispersing and material dissolution due to the low water temperature, rather than the incorporation of air into encapsulated balloon-like structures.
