Salmonella and E. coli were absent in all analyzed samples. No
samples from company A showed contamination (Table 2). In
company B two samples of cocoa liquor e one used in the processing
of milk chocolate and the other in light chocolate - Enterobacteriaceae
(1.30 and 2.22 log cfu/g) and total coliforms (1.36 and
0.96 log MPN/g) were recovered (Table 3). Furthermore, the sample
used as an ingredient for milk chocolate also showed thermotolerant
coliforms (0.96 log MPN/g).
