Chitosan is a polysaccharide prepared by deacetylation of chitin
, one of the most abundant natural polymers in living organisms such as crustacea, insects and fungi. Chitosan has antimicrobial
properties, which depend on several factors such as the degree of
deacetylation and polymerization, type of bacterium and environmental
conditions such as pH, temperature and nutrient
composition of the food matrix (Devlieghere, Vermeulen, &
Debevere, 2004). Chitosan has been proved to be non-toxic,
biodegradable and biocompatible.
