this is a classic northern peasant-style rye bread. originally, oats and barley may well have been added to the rye to make a loaf that would feed the family for as long as possible.each household would take its grain to be milled, and the bread would then be set to rise in proving troughs. the blend of grain plus the use of troughs gave a noticeably different flavor and texture to each loaf, from family to family and even from loaf to loaf
