animals are concerned, the production of functional foods
is primarily associated with the nutrition management,
which makes possible to either increase or decrease the
ratio of biologically active components in their products
and excretion. It is important that each animal category
is given adequate feed, which will produce beneficial
effects on the animal welfare and health, and indirectly
also, on human health. This article deals with only a part
of research in the field of functional foods, which refers to
polyunsaturated fatty acids, the source of which could be
different products of animals specifically fed or selected.
The purpose is to increase the content of n-3 unsaturated
fatty acids in food products by using biologically active
macromolecules for the reduction of risks of cardiovascular and metabolic disease in humans
