After centrifugation (1520 × g for 20 min), four phases were
formed: free oil, emulsion (containing oil and protein), aqueous
phase, and solid residue. The free oil, emulsion, and aqueous phase
were transferred into a separation funnel following a method
developed by Lamsal and Johnson (2007). The transfer caused the
phases to mix; therefore the mixture was left for 1 h at room tem-perature until the phases were separated again. The free oil phase
at the top part consisted of a thin layer and the distinction with the
emulsion phase was not very clear.
