Mycotoxins are a relatively large and diverse group of naturally
occurring fungal toxins, many of which are harmful to both humans
and animals. Most of the mycotoxins that are considered to be
important are produced primarily by Aspergillus, Penicillium and
Fusarium spp. Under appropriate environmental conditions,
mycotoxin production may occur in the field before harvest and
during storage or processing (CAST, 2003).
The mycotoxin contamination of agricultural products is
a serious health hazard with an increasing attention worldwide.
Cereals are good substrates for mold infection and production of
mycotoxins. Maize often contains a range of mycotoxins that
sometimes occur in combination. These include aflatoxins (AFs),
ochratoxin A (OTA), fumonisins, zearalenone (ZEA), deoxynivalenol
(DON) and other Fusarium mycotoxins (Reddy et al., 2009). In
order to protect the consumer, the European Union legislation
fixed maximum admissible levels in raw maize and derived
products for AFs, OTA, fumonisins, DON, and ZEA
