3.6. Study of lipase stability with time during sunflower oil hydrolysis
The stability of the produced C. Rugosa lipase obtained by using the novel substrate was investigated. Fig. 6 shows the time course of sunflower oil hydrolysis (conversion) using C. rugosa lipase at 37 C. The lipase remained active until the first 24 h then there was no significant changing in the conversion, In other words, the activity of the enzyme leveled off and dropped to be zero after 24 h during hydrolysis. Therefore, lipase remains stable for 24 h only. This problem can be overcome through enzyme immobilization to enhance the enzyme stability as well as workability.
