2.6. Assay of banana quality
Titratable acidity (TA) and total soluble sugars (TSS) were
determined according to the method described by Bico et al. (2009)
[26]. For the TA assay, the result was expressed as g malic acid per
100 g sample dry weight (DW). For the TSS assay, the absorbance
was measured by spectrophotometry against a reagent blank at
490 nm, and the result was expressed as g glucose per 100 g sample
of DW. Finally, the ratio of total soluble sugars to titratable acidity
was calculated and expressed as the TSS/TA ratio.
