Pectin extracted for 30 min had higher methoxy content (9.84 g/
100 g) and equivalent weight (839.1), compared to extracted for
60 min with a methoxyl content of 9.55 g/100 g and an equivalent
weight of 804.2. Methoxyl content and equivalent weight
decreased with increasing extraction time (Table 5). This could be
due to the partial degradation of pectin.
