The selected jellies showed a gel-like behaviour with G0 > G00, and a gentle linear in- crease of log(G0) with log(u), which is typical of weak-gels (Genovese et al., 2010). The steeper slope of the jelly without pectin, and its G0eG00 crossover at high frequencies indicated the more liquid like character of this sample (Basu et al., 2011).
