The color of fresh-cut broccoli raab leaves was measured at
each storage duration by a spectrophotometer (Konica Minolta
CM 2600d, Japan) in the reflectance mode in the CIE L*a*b*
color scale. Hue angle (h◦ = arctg (b*/a*)) and saturation (Chroma =(a∗)2 + (b∗)2) were then calculated from primary L*, a* and b*
readings. The spectrophotometer was calibrated with a standard
reference having a value of L*, a* and b* corresponding to 97.76,
−0.06 and −0.30, respectively
