The regular consumption of fruit and vegetable increases anti- oxidant intakes of the human beings, and participates to the pro- tection against oxidative stress and some degenerative diseases. The consumption of multivitamin juice could participate to the antioxidant daily intakes if the storage in the product in the food system does'nt exceed 2 months whatever the packaging. Indeed, during the juice storage, dissolved oxygen decreased for both PET and glass bottles and strong degradations of ascorbic acid and b- carotene were observed after 3 and 2.5 months respectively. In PET bottles, vitamin C and b-carotene were oxidized in a higher extent than glass bottles. In the latter, b-carotene oxidation also took place but with a noticeable delay compared to PET because isomerisation was prevailed (i.e. 13-cis-b-carotene and 9-cis-b-carotene accumulation). From a nutritional point of view, the juice packed in glass bottles content higher amount of antioxidant during the course of storage and could be a healthier source of bioactive compounds. However, the use of PET with oxygen scavenger should limit oxygen ingress and auto-oxidation and protect to photo- oxidation due to UV barrier properties of PET.
From a nutritional point of view, the juice packed in glass bottles is more interesting since b-carotene isomers still have pro-vitamin activity.
