Question #1 likely happens in episode 3. How "Strangers" plays out it fits.

It is not made clear that Bob gets bit but something is clearly off with him. How he is with Sasha among other things.

The "tainted meat" scene is in this episode! Bob gets something eaten(likely his leg but it wasn't specified to us). He doesn't say anything to them about "tainted meat" but you know they are eating it and that it is tainted. Bob is too emotional from realizing what has happened.
