Supplementation of feed with 10 g/day of AM for 30 days prior
to slaughter resulted in lower hematocrit value, erythrocyte count
and glucose level in bovine blood collected at slaughter compared to
that from non-supplemented bulls. The meat from the AM treated animals
also had higher a* and b* at 24 h post-mortem and lower b* at
28 days post-mortemthan that fromthe control animals. The AMtreatment
thus improved some stress blood indicators at slaughter and meat
quality traits at 24 h and 28 days post-mortem and therefore merits
further investigation
