In order to describe the shape of thyme drying infusion and determine the most appropriate empirical equation,
we used nine thin layer drying models of medicinal plants (Table 2).
The sustainable model for describing the drying kinetics shape of thyme is selected according to the highest correlation coefficient (r) and the lowest reduced chi-square (c2) and mean bias error (MBE).
