Corn oil was used as an example of a long chain triglyceride
(LCT) and was purchased from a local supermarket. Miglyol 812
was used as an example of a medium chain triglyceride (MCT)
and was purchased from SASOL (Houston, TX). Orange oil was used
as an example of a non-digestible flavour oil and was obtained
from Givaudan Flavors Corporation (Cincinnati, OH). Beta-carotene
(Type I, C9750) and Tween 20 were purchased from the Sigma
Chemical Company (St. Louis, MO). Lipase (from porcine pancreas
pancreatin) and bile extract (porcine) were also obtained from Sigma.
All other chemicals used were of analytical grade. Double-distilled
water was used to prepare all solutions and emulsions.
